Transforming phytate in cereals milk into digestible phosphates and metal ions by phytase from Bacillus subtilis

Phytate phosphorus reserves are the main phosphate storage in variety of cereals. Phytate is also considered as an anti nutrient in food and feeds. This anti-nutrient effect is expressed through the ability of phytate to bind many metal ions (Fe3+, Zn2+, Cu2+, Mn2+, Ca2+, Mg2+) in neutral and alkaline conditions, as well as with the protein and starch in acidic conditions. In this study, alkaline phytase enzyme (BacP) originated from Bacillus sp. was used to remove the anti-nutrient effect of phytate in cereal milk. Using 40 IU/l BacP at 65⁰C to treat pasteurized and sterilized cereals milk from 30 to 60 minutes induced the liberation of 20-30% inorganic phosphate from available phytate in cereals. Cereal milk was treated by enzyme BacP increases the level of digestible not only phosphate but also mineral ions (Ca, Fe, Zn).
